Gram's Cowboy Cookies

INGREDIENTS:

  • 2 large eggs

  • 1 cup shortening

  • 1 cup light brown sugar, packed

  • 1 cup granulated sugar

  • 1 teaspoons vanilla extract

  • 2 cups all-purpose flour 

  • 2 cup old-fashioned whole-rolled oats (not quick-cook or instant)

  • 1 teaspoon baking soda

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon salt

  • 1 1/4 cup semi-sweet chocolate chips

 

DIRECTIONS:

  1. Using a mixer, add the butter, sugars, vanilla, eggs and beat on medium-high speed until creamed and well combined.

  2. Stop, scrape down the sides of the bowl.  On a low speed, add the flour, baking soda, salt, and beat on low speed until just combined, about 1 minute.  Then add the oats for an additional 30 seconds - 1 minute.

  3. Remove bowl and add the chocolate chips, using a spoon, blend in the chocolate chips.

  4. Preheat oven to 375F, line a baking sheet with a parchment paper or with cooking spray. Place 1 - 1 1/2" round balls of cookie dough on baking sheet and slight press down, spaced at least 2 inches apart and bake for about 10 to 12 minutes or until edges are golden brown.  Allow cookies to cool on baking sheet for about 2 minutes before transferring them to a cookie rack.  They are extra yummy when you serve them warm!!

  5. Cookies will keep airtight at room temperature for up to 1 week or in the freezer for up to 6 months.  Enjoy!!
