1 cup light brown sugar, packed
-
1 cup granulated sugar
-
1 teaspoons vanilla extract
-
2 cups all-purpose flour
-
2 cup old-fashioned whole-rolled oats (not quick-cook or instant)
-
1 teaspoon baking soda
-
1/2 teaspoon baking powder
-
1/2 teaspoon salt
-
1 1/4 cup semi-sweet chocolate chips
DIRECTIONS:
-
Using a mixer, add the butter, sugars, vanilla, eggs and beat on medium-high speed until creamed and well combined.
-
Stop, scrape down the sides of the bowl. On a low speed, add the flour, baking soda, salt, and beat on low speed until just combined, about 1 minute. Then add the oats for an additional 30 seconds - 1 minute.
-
Remove bowl and add the chocolate chips, using a spoon, blend in the chocolate chips.
-
Preheat oven to 375F, line a baking sheet with a parchment paper or with cooking spray. Place 1 - 1 1/2" round balls of cookie dough on baking sheet and slight press down, spaced at least 2 inches apart and bake for about 10 to 12 minutes or until edges are golden brown. Allow cookies to cool on baking sheet for about 2 minutes before transferring them to a cookie rack. They are extra yummy when you serve them warm!!
-
Cookies will keep airtight at room temperature for up to 1 week or in the freezer for up to 6 months. Enjoy!!
